White rum | cured strawberry | lime | raspberry bier | egg white
A festival dedicated to drinking beer for 16–18 days. It seemed only appropriate for us to make a drink designed around a Berliner Weisse or German wheat beer. Be warned, drinking this for 16–18 days may result in us having to go back to the medicinal menu concept.
Aquavit | cynar | sherry | peach bitters | banana leaf | spiced oat milk
A music festival created by Hall & Oates, known for their hit single ‘Out of Touch’ so we wrapped the cocktail in banana leaf (get it? You can’t touch it, na na na na can’t touch this) and added spiced Oates milk. We’re grasping at straws here but it’s served without a straw.
Whiskey | Cognac | pandan leaf | red bean | whey
Also known as Chinese New Year. The moon is a constant source of wonder, myth and worship and when it’s full it’s time to get weird. Traditionally at this festival moon cakes are gifted to friends, family and neighbours. Our recipe for red bean paste has been gifted to us.
Rye whiskey | sweet potato | sage | lemon | egg white
Celebrating what you would find around a dinner table, plus bourbon, minus the family drama. Uncle Richard is into the whiskey again!
Day of the Dead
Chartreuse | maraschino | mezcal | whole egg | mole
A festival to awaken the spirits of those who have passed on by dressing like them. To mimic raising the dead we have adapted this to a pick me up drink, designed to nurse hangovers. It’s inspiration comes from Mexico’s national sauce, Mole. Don’t blame us when the inevitable zombie apocalypse knocks on your door.
Into The Wild
Macadamia washed vodka | verjus | salt baked pineapple | basil
A food festival by renowned chef Francis Mallmann who harnesses cooking with fire and how we used it historically. Here we salt bake the fruit with egg whites to keep all the moisture in and dress the fruit in its own juices. Just like after a big night out and you’re sweating bullets.
Carbonated mulled wine | cardamom | mountain pepperberry | sandalwood
“Mona’s winter festival delves into centuries-old winter solstice rituals… Celebrating through large-scale public art, food, film, music, light and noise”, weird and wonderful is what we are all about and MONA has it in spades. This potion is our nod of the hat to fellow experimentalists.
Manzanilla sherry | peach oleo | fermented rice
Harvest festivals are pretty common around the world in agricultural communities. Often the excess produce is fermented and labourers are rewarded with this drink. Like Jesus turning water into wine, we too shall turn rice into beer.
Gin | Seedlip garden | lemon | rosemary smoked pea
“Burning man is not a festival, it is a catalyst for creative culture in the world”. They also like getting high and burning shit with an emphasis on leaving nothing behind. Our sacrifice to the pagan Gods of electronic music is a burnt rosemary totem for which we receive the blessing of sweet dance moves.
Cherry Blossom Festival
Rum | vermouths | beetroot | orange bitters
Also known as Hanami. Instead of using cherry blossoms, we’ve turned beetroot on its head by taking something often earthy in nature and making it into a delicate and nuanced aroma. This drink has us reminiscing of spring time in Japan…this is not a haiku.
